Parmentier, Antoine-Augustin

   agronomist, pharmacist
   Born in Montdidier, Antoine-Augustin Parmentier first served as chief apothecary at the invalides, in Paris (1772), and published a work dealing with the chemical aspects of the potato (Examen chimique de la pomme de terre, 1773) which he had seen being grown in Germany and recommended its cultivation in France. This study won him a grant from the Besançon Academy to study new forms of vegita-tion available for human consumption. The author of other studies on the production of wines, grains, chestnuts, and other products, he was named first pharmacist of the army and inspector general of health services (1805-13) and contributed to the promotion of antiviral vaccinations. Parmentier was named to the Academy of Sciences in 1795.
